Here’s our meals for this week. Hope you can find something useful for your family too!
Monday- Crock Pot Potato Soup For this I take 7 large baking potatoes and wash, cut them up with the skins on. Chop and peel one carrot, chop and wash one celery stalk, chop one onion add to crock. Cover with chicken stock and cook for 9 hours. Right before you eat add 1.5 cups of milk, 1/2 c sour cream and cook for 30 minutes more. Add cooked bacon (I use turkey bacon) and 1/3 cup cheese on top along with cut/chopped green onions. Serve. YUM!
Tuesday Catalina chicken, roasted asparagus, salad. For Catalina chicken my dh grills the chicken and the last 5 minutes adds catalina dressing. We add asparagus, olive oil and salt to a aluminum foil packet and throw on the grill the last 8 minutes.
Wednesday Tacos and guacamole
Thursday Pinto beans and cornbread ala southern style!
Friday Homemade pizza Recipe
2 tbsp. olive oil
1 pkg. yeast (or 1 tsp)
1/4 tsp. salt
4 c. sifted flour
