Oatmeal Chocolate Chip Cookies in honor of National Chocolate Chip cookie day!

I had no idea this great cookie had it’s own day. When I read that it did and it’s today I had to make some for my kids. They love homemade cookies. Since we try to eat kinda healthy…haha. I put oatmeal in them to boost their fiber and just in general make me feel less guilty. ha! I hope you enjoy these as much as my kids will as soon as they get home from school! Ingredients
  1. 1.5 c packed brown sugar
  2. 1 c butter (or 2 sticks softened)
  3. 1 tsp vanilla
  4. 1 egg
  5. 2 cups quick cooking oats
  6. 1.5 c flour
  7. 1 tsp baking soda
  8. 1/2 bag semisweet chocolate chips
Instructions
  1. Heat oven to 350*. Beat brown sugar and butter until blended. Stir in vanilla and egg until it's light and fluffy. Stir in oats, flour and baking soda until mixed. Do not overmix that makes them flat.
