I had received an over abundance of potatoes back in November and needed to find a way to use them all. So, I looked up recipes for everything from breakfast to dinner. This breakfast dish stood out to me and it was so unbelievably yummy! I can’t find the recipe I used so I’m doing it from memory. Here’s the cast of characters:
1 well seasoned and loved cast iron skillet
6 potatoes washed, chopped with skin on
6 eggs
ham bits usually leftovers
1/2 an onion diced
butter
Add 1 tbs butter to your pan and cook onion and potatoes until potatoes are almost done. Approximately 15-20 minutes over medium to medium high heat. Add your ham about half way through cooking time.
Then make a well in your potatoes and add a pat of butter for each egg you are about to bake in the oven.
Add eggs.
Bake on 375 for 10-12 minutes.
Add cheese and cook just until melted. Add salt and pepper to taste.
And plated up!
This reminded me of the packages of peppers, onions, potatoes that you can buy and make. It’s cheaper this way and it was so very good!
