Smothered Chicken Recipe~Guest Post

Krista has been making this for years and her family loves it.  When my wonderful family who lives down south visits, this is the first thing they request that I make. Hope you love it too.

This works best with chicken that has been cooked on the grill but is also good with pan fried and baked chicken.

 

Krista’ smothered chicken

What you need:

4 boneless chicken breasts

sliced provolone

sliced mozzarella

 olive oil

bacon ( 4-6 slices cooked but not too crisp)

Italian dressing

green onion( 2 stalks chopped)

Marinate the chicken overnight in the Italian dressing.

After the chicken has been cooked however you like

place the chicken  on a baking pan with just a little olive oil in a thin coat on the pan.

place chopped green onions on each breast

cover each breast with  cooked bacon ( as much or as little as you like)

put 1 slice of each cheese on each breast.
bake in oven at 350  just until cheese is melted.  voila!
another variation I have done with this is adding a layer of sweet bbq sauce to the chicken breast before the green onion.
