This is my favorite time of year. My favorite vegetable is a cold weather crop and I love it when the stores begin bringing it in. If you’ve not had fresh asparagus roasted you are simply missing out. My kids love fresh asparagus. That slimy stuff out of a can is disgusting. You have got to try it this way. You will be excited you did! Here’s my recipe in pictures and the actual recipe will follow!

Wash the asparagus

 

from the bottom of the asparagus cut off about 1 inch (this part is woody and difficult to eat so just get rid of it).

Spray pan and place asparagus in it. Add 3 tbs evoo (olive oil) and sprinkle salt on top.

  1. asparagus
  2. evoo (olive oil)
  3. salt
  4. spray for the pan
Instructions
  1. Heat oven to 425* and roast for 10-12 minutes. You will not believe how good asparagus can be. All 3 of my kids get excited when they know this is for dinner. Excellent side with Ham for an Easter dinner.
