Jambalaya Recipe

My dh has been requesting Jambalaya and I finally made it for him last night. It was so good. I forgot to take pics but here’s what I did to make this tasty meal.

Ingredients:
red bell pepper
banana pepper
onion
2 cloves of garlic
1 can diced tomatos
3 chicken thighs (cooked)
2 andouile sausage
1 tsp crushed red pepper
2 tsp italian seasonings
2 tsp cajun spices
rice

Chop the peppers and onions and saute in a skillet for 5 minutes. Grate garlic (or mince fine) and saute for a minute. Add spices, cooked chicken off the bone, diced tomatoes and sausage cook until done. Serve over rice cooked according to directions. I made 3 cups of rice and this recipe fed my family of  5 well. As usual there were no leftovers they ate them all. My kids and husband loved this meal!
