Love Pineapple Upside Down Cake? This is for you!
With this recipe everyone can grab their own little cake! This is a cute idea for Easter if you’re taking a dish to a brunch or dinner, and its sure to please a crowd! Its DEEEEELISH!
First here’s what you’ll need:
Cooking Spray
1/4 Cup of Butter (Half a Stick)
1/3 Cup Brown Sugar
2 20 oz cans of Chunk Pineapple (Drained and Reserve the Juice)
Yellow Cake Mix
Eggs
Vegetable Oil
Whipped Topping
Cherries
Got your ingredients? Lets mix and bake!
Get your muffin tin sprayed with non stick spray
Next melt your butter in the microwave then add your brown sugar and stir until completely mixed
Next spoon about a teaspoon into each muffin spot
Next drain your pineapple chinks and reserve the juice. We are going to use that in the cake mix
Place 5 chunks in each spot in a star shape
Next mix your cake mix…use pineapple juice in place of water…mine called for 1 cup of water so I used 1 cup of pineapple juice, 1/3 cup of vegetable oil, and 3 eggs…
Having a helper to watch the mixer is a great idea!
Pour about 1/4 cup of batter into each spot over the pinepple chunks
Bake at 350 about 20 minutes or so. Make sure toothpick comes out clean.
Take a knife and make sure the sides are loose and cool for about 7 minutes, then flip them over onto a cookie sheet and let cool about 10 more minutes before lifting the muffin tin up
I transfer them onto cupcake liners for easy serving!
Let them cool completely!
Now we top them!!!
You can use Reddi Whip in the can or you can use a cake piper to put on the topping…then a cherry on top!!
