St. Patrick’s Day Dinner Corned Beef Brisket with Potatoes, Carrots, Onions and Cabbage…YUMMO

I used to be so scared to cook a corned beef brisket. It is absolutely one of the easiest meals to make. Here are step by step instructions for No Fail Corned Beef with Cabbage and Potatoes.

 

Step 1. Pick out a brisket. Don’t be scared. Just grab one. They run around 3 lbs and that fed my family of 5 with plenty of leftovers.

Put it in your crock pot with the spice packet on top.

Wash and cut up your potatoes, onions, carrots and cabbage. I did 5 potatoes, 4 large carrots, peeled and cut into chunks and 1/4 a cabbage head. Add a half to a cup of water to your crock pot.

Add to your crock pot all the ingredients except the cabbage. I did it wrong and the cabbage turned to mush. Add your cabbage in the last 30 minutes of cooking. You don’t want cabbage mush. 🙂

I cooked on low for 5-6 hours. It was so unbelievably good. I will be having it for lunch today! Here’s the cooked version.
