Red Wine Chicken Slow Cooker Recipe #crockpotrecipe #recipe

Tuesdays are crazy nights for us. The kids take gymnastics and we are just running after school. I try to usually make a dinner in the crockpot those nights.  This night we had a yummy red wine vinegar chicken slow cooker recipe.  Here’s what I did.

The cast of characters:

I used:

4 chicken breast (fed my family of 5)

1/4 c red wine vinegar

1 tsp oregano and parsley and basil

3 cloves of garlic peeled and put in whole

1 onion thinly sliced added on chicken

28 oz diced tomatoes with juice save to pour over chicken last

1 tbs olive oil to go on crockpot before food goes in

salt and pepper the chicken breast to taste

You got to love when you go to sprinkle the spices in and dump in half the bottle. Had to rinse and start over. LOL Then add onions and 3 cloves of garlic

and last add tomatoes and red wine vinegar.

Then cook on low for 4-6 hours. Cook brown rice and add the red wine chicken and juices to the top of the rice and serve. It was tangy and yummy. All 3 children loved this dish. I was very impressed and amazed by how it turned out. I just needed something to cook with chicken breast. LOL I had found this recipe for balsamic chicken and didn’t have any balsamic vinegar so I switched it with something I already had and it was divine. So it’s similar but I changed a few things to fit my family. Hope you enjoy! Let me know if you try it. I’m always curious to what others thought of the recipe.
