Sisterhood of the traveling….PLATE!?!

Yep you heard it right….

Remember the movie about the pants…well, we don’t wear the same size pants….but we do share the love of goodies! 

My friends, Dina, Kryss and I try to see each other once a month at least. And this past week we met for lunch and Kryss presented us with the cutest travelling plate. My birthday was the most recent so I got it first to start a new tradition. So this evening as we cookout I will present it to Dina  with a completely insanely yummy coconut cream meringue pie (don’t worry, I wouldn’t leave ya hangin, I put the recipe below 😉 )! Then it’ll be her turn to put something on the plate and get it to Kryss…and so on and so forth!!! Ahhhhh I can’t wait to share with you when it gets back to me…..and whatever I decide to sent it forth with!!!!

 

Pie

Coconut Cream Meringue Pie

1 – 9 inch pie shell, baked

For the filling:

2/3 Cup Sugar

1/4 Cup cornstarch

1/4 teaspoon salt

2 Cups Milk

3 egg YOLKS lightly beaten (save the whites!)

1 cup flaked sweeten coconut finely shredded

2 Tablespoons butter

1/2 teaspoon vanilla extract

In a saucepan mix sugar, corn starch and salt. Add milk until mixed and bring to a boil on medium heat until thickened and it’ll get bubbly too. (Be patient, it’ll thicken) then add a little hot mixture into the egg yolks and mix and pour back into saucepan and bring to boil on medium and cook 2-3 min more. Remove from heat and add coconut, butter and vanilla and whisk until smooth!

Now pour the filing into the pie crust!

For the meringue:

3 egg whites

6 Tablespoons sugar 

1/2 Cup flaked coconut

Beat egg whites adding each Tablespoon of sugar one at a time until still peaks form. Spoon over filling sealing against the edges of the crust. Sprinkle top with coconut and bake on 375 until top starts to golden brown.

Coca Cola Cake

Love the Coca Cola cake from your restaurant?

Then you’ll absolutely love this easy recipe to make it at home! (AND it’s a whole lot cheaper than buying it by the slice!) I made it for dessert today for after dinner! It’s a crowd pleaser!

 

Here’s what you’ll need:

For the cake:

1 cup Coca Cola (dont skimp…get The Real Thing!)

1/2 cup vegetable oil

1 stick butter

3 TBSP cocoa

2 cups sugar

2 cups flour

1/2 tsp salt

2 eggs

1/2 cup buttermilk

1 tsp baking soda

1 (ISH) tsp vanilla (I always use a little more than what it calls for)

For the icing:

1 stick butter

3 TBSP cocoa

6 TBSP heavy cream

1 (ISH) tsp vanilla (there’s that ISH again)

3.5-3.75 cups confectioners sugar

what youll need

Ok now here’s how easy it is:

*Preheat oven to 350 degrees*

1)  In your mixing bowl mix your:

     Flour, Sugar, and Salt

2) In a saucepan bring the following to a boil:

     Coca Cola, Oil, Butter and Cocoa

3) Pour the mixture into the mixing bowl and mix, then add the following:

     Eggs, Buttermilk, Baking Soda, and Vanilla and mix this well

4) Pour into a 13 x 9 baking dish and bake 25-30 minutes

 *Take out and cool for 10 minutes*

Now…during this 10 minutes we are gonna make the icing!

1)  In a saucepan melt your Butter, Cocoa and Heavy Cream. Be sure the butter is melted smooth

2) Add the Vanilla and Confectioners Sugar and mix until smooth.

Spread icing over cake while its still warm.  Ready to serve in about 45 minutes!

SOOOOOO EASY SLOW COOKER CHICKEN CHEESE TORTELLINI

Slow Cooker Chicken Cheese Tortellini

This recipe is so easy! Today was one of those days I just didn’t think I wanted to spend time planning then cooking dinner this evening. I’m glad I snagged all these ingredients to have on hand for a day such as today! You literally just throw it all in the crock pot and in 6-8 hours you scoop it out and eat it!

What you’ll need: (I double the recipe because I feed a BUNCH!)

1 package frozen cheese tortellini

1 package frozen spinach

4 cups chicken broth

1 can Italian style tomatoes

1 pack cream cheese

2 chicken breast boiled and shredded

 

Next what you’ll do…

Throw it all in the slow cooker and turn on low

Tortellini

Scoop into a bowl and eat!!!! Its….that…simple! And oh so delicious!!!

 

 

 

Individual Pineapple Upside Down Cakes

Love Pineapple Upside Down Cake? This is for you!

With this recipe everyone can grab their own little cake! This is a cute idea for Easter if you’re taking a dish to a brunch or dinner, and its sure to please a crowd! Its DEEEEELISH!

First here’s what you’ll need:

Ingredients

Cooking Spray

1/4 Cup of Butter (Half a Stick)

1/3 Cup Brown Sugar

2 20 oz cans of Chunk Pineapple (Drained and Reserve the Juice)

Yellow Cake Mix

Eggs

Vegetable Oil

Whipped Topping

Cherries

Got your ingredients? Lets mix and bake!

Get your muffin tin sprayed with non stick spray

Next melt your butter in the microwave then add your brown sugar and stir until completely mixed

Next spoon about a teaspoon into each muffin spot

Next drain your pineapple chinks and reserve the juice. We are going to use that in the cake mix

Place 5 chunks in each spot in a star shape

Next mix your cake mix…use pineapple juice in place of water…mine called for 1 cup of water so I used 1 cup of pineapple juice, 1/3 cup of vegetable oil, and 3 eggs…

Having a helper to watch the mixer is a great idea!

Pour about 1/4 cup of batter into each spot over the pinepple chunks

Bake at 350 about 20 minutes or so. Make sure toothpick comes out clean.

Take a knife and make sure the sides are loose and cool for about 7 minutes, then flip them over onto a cookie sheet and let cool about 10 more minutes before lifting the muffin tin up

I transfer them onto cupcake liners for easy serving!

Let them cool completely!

Now we top them!!!

You can use Reddi Whip in the can or you can use a cake piper to put on the topping…then a cherry on top!!

APPLE PORK CHOPS

Quick and Easy Apple Pork Chops

Need a delicious but fabulously easy dinner idea? Apple Pork Chops will get you through!

Here’s what you’ll need:

4-5 Boneless chops

1 can apple pie filling

1 box instant stuffing

1 Tbsp Olive oil

Let’s assemble!

Preheat your oven to 375

Brown the Chops

In a skillet, drizzle the olive oil and brown your chops on both sides. (I’ll tell you a secret, I season mine with a bit of salt, pepper, garlic and onion powder for more flavor. My gang LOVES some onion and garlic)

While those are browning, spread the apple pie filling in the bottom of a 13 x 9 dish

After they are browned, arrange them over the apples

Next prepare the stuffing mix and spoon over the top

Cover with foil and cook for about 25 minutes. Then, uncover and cook for an additional 15 minutes

Take out and dinner is served!!!!

I serve mine with green beans! (seasoned with a little beef bullion!)

Make You Holla Cake

A Cake By Any Other Name…

You may have heard it called many things…Better Than (we are gonna keep  it G rated here), Candy Bar Cake, Heath Bar Cake…with a few variations here and there…but here we call it Make Ya Holla Cake! Its simple, but SUPER delicious! I’ll share my version with you!!! It’s a favorite around here!!!

Next let’s get our ingredients together:

Ingredients 2

German Chocolate Cake Mix

Oil

Eggs

1 Can Sweetened Condensed Milk

1 Jar Caramel Ice Cream Topping

1 Tub Whipped Topping

2 Heath Candy Bars

Let’s Get It Started:

First mix and bake the cake as directed in a 13 x 9 Pan

Let cool completely and get your toppings ready

Pour Sweetened Condensed Milk Over Cake and refrigerate about an hour

Remove from refrigerator and Pour Caramel Topping Over Top and refrigerate about another hour

OH Now The Caramel

Take out and top with tub of whipped topping

Crush candy bars and sprinkle over the top

Beef Wellington At Home!

Beef Wellington

Love some of the dishes you find at fancy restaurants but can’t always afford to go out? For about the price of one of these meals at a restaurant you can make this Beef Wellington for about a family of 4! You can half the recipe if it just you and love <3 

Ingredients:

First let’s get what we will need. All found at your local supermarket!

5 lb Beef Tenderloin (I go to the town butcher for this cut of meat. Chain Supermarkets just don’t live up to my expectations)

4 oz Liver Pate

2 + 4 +4  TBSP Butter

1 Medium Onion Chopped

1 Cup Mushrooms (Sliced

2 Puff Pastries (Freezer Section, Usually sold 2 per box)

1 Egg

1.5 Can Beef Broth

4  TBSP Red Wine

Here we go!

Take your pastries out of the freezer to thaw and soften!

Preheat the oven to 425

Soften 4 TBSP Butter

Place Beef Into Baking Dish (I halved my beef, about 2.5 lb fits per pasty sheet when you wrap it)

Spread the softened butter over the beef

Bake until browned, about 20 minutes. Don’t worry, we are baking it again, we aren’t serving raw meat!

Remove and let beef cool. Reserve the juices for the dip later!

While the beef is baking and cooling, in a skillet saute the onion and mushrooms with remaining 4 TBSP Butter (about 5-7 min)

Remove when finished and set aside to cool.

Next take the last 4 TBSP softened butter and mix it with 4 oz Liver Pate. I used a fork to just smash and mix it all together. Works fabulous!

Tine To Prep and Bake!

Alright! Now let’s get it all together and get it ready for baking! Turn the oven up to 450 to preheat!

At this point you should be able to unfold your pastry sheet. Spread the Pate/Butter Mixture on one of the Beef Halves. (I used a butter knife, it was a bit too thick to use the basting brush) After spreading one side place it on the pastry sheet. Then spread the top side.

Next you want to top it with the onion/mushrooms.

Stretch and close the pastry and pinch it good and closed. Brush with egg white. Then cut a few slits in it for venting while baking. Prepare the second one if you didn’t half the recipe.

Next Bake it at 450 for about 15 min or until the pastry is golden brown. Reduce to 425 and bake about 20 more minutes. Check with meat thermometer, its done at 145 degrees.

Fresh Outta The Oven

Set aside and keep warm while we make the dip!

In a saucepan where you put the drippings from the pans from before add 1.5 cans beef broth and 4 TBSP Red wine and bring to a low boil, then simmer for 10 min. Serve on the side.

I paired mine with garlic mashed potatoes and asparagus and it was Happy Valentines to everyone in the house!

Slow Cooker Chicken Tortilla Soup

Some days you just wish you could open a magic box and POOF dinner would be  ready! Well this is ALMOST the answer to your wish! Fast, Easy, Delicious! This recipe for Chicken Tortilla Soup is simple and delicious! I make a huge cooker full to feed the masses I have in my house, you could half the recipe if you need to.

First the ingredients!

3 lb chicken breast

4 cups chicken broth

2 cans petite diced tomatoes 

1 cup chopped onion

8 pressed garlic cloves

5 tsp chili powder

3 tsp cumin

2 tsp paprika

2 cans black beans

3 cups frozen corn

2 Tbsp lime juice

1/2 cup fresh chopped cilantro

Avocado

Sour Cream

Shredded Cheese Tortilla Strips

Step 1 of 2! Thats right only 2 steps!

In the slow cooker, add the chicken broth, tomatoes, onion, garlic, chili powder, cumin, paprika. Next put the chicken breast in and cook on low for 6 hours!

Step 2….You’re almost done!

After the 6 hours are up, remove the chicken breast and shred then add it back to the cooker. Add the black beans, frozen cord, lime juice and cilantro. Stir and allow to heat through. I turned mine on high for about a half hour then back to low.

Cook time: 45  minutes at 400*

Ingredients: 

1/3 Onion chopped

veggies of choice (I used cauliflower, broccoli and carrots) chopped

Spinach (I used fresh but you can use canned and drained)

chicken (previously grilled so using leftovers up is great)

5 eggs

1 cup bisquick

1 1/2 cup DairyPure milk 

1/2 cup mozzarella cheese

salt and pepper to taste 

mix eggs, milk, salt and pepper for quiche

Mix eggs, milk and salt and pepper together.  Spray a 9×13 pan with spray oil. Add chicken, veggies and cheese to pan. Pour milk and egg mixture on top.

Then into the oven it goes. I cooked it for forty five minutes on 400*. It was perfect when it came out.

Meatball Burger Recipe

To make this yummy recipe I actually had to grill. I have not been a griller in my life. My husband is so good at it that when I tried we all were just disgusted. But he showed me what to do and I did it. They were such a hit with the family. Here’s the ingredients.

I mixed up 1 tsp italian seasoning, 1 tsp garlic powder, 1/2 can of red gold tomatoes with basil, garlic and oregano and cut up mozzerella cheese with my ground beef.

Then I grilled them on the grill. It wasn’t pretty but it wasn’t burned and they tasted great.

Then we added our favorite fixings. This was my hubby’s burger. He loves the salad he makes on top of his burger. 🙂

Ingredients
  1. 1 lb ground beef
  2. 1/3 can red gold basil garlic oregano tomatoes
  3. 1 tsp garlic powder
  4. 1 tsp italian seasoning
  5. 1/8 bar of cut up mozzarella
Instructions
  1. Mix well. Pat into patties making a thumbprint in the middle for more even cooking. Grill.
