Menu Monday #menumonday

Last week some of my favorite dinners were made and I also made some new ones. This week I’m struggling to find things to eat. I’m going to try to incorporate a few more meatless meals per week. Let’s see if I can get the family on board. 🙂

Monday~Big Salad straight from the garden. Kale, butter lettuce, tomatoes and carrots I may add some peanuts and cranberries.

Tuesday Shrimp Pasta Salad …I haven’t decided how I’m going to make this yet. I’ll post the recipe as soon as I do. This is the shrimp salad I’m looking at making.

Wednesday dinner out!

Thursday Crockpot BBQ chicken, green beans, corn on the cob

Friday Pasta Alfredo, tomato and cucumber salad

Arggg, I’m back from my month at my mom’s house in Florida. We had a great time. We left because of tropical storm Debbie rolling in. The waves there were crazy at the beach.  Now it’s time to get back to cooking and cleaning my house! Here’s what we’re eating this week.

 

Monday Meatloaf made with ground beef and turkey sausage mix, onions, spices. cooked in a ring so it cooks faster. Carrot sticks, green beans.

Tuesday Zucchini Au Gratin, salad, fresh sliced tomato

Wednesday Dinner at Church (yay for not cooking!)

Thursday Baked Chicken, cucumber dill salad,  peaches

Friday Taco soup using ground turkey

I do love planning…most anything.  I’m most excited about the cucumber dill salad and the zucchini au gratin this week. What’s on your menu for the week?

Menu Monday


Ok, so yes we’re still at the beach. But I’ve cooked all our meals but 2 so far. Here’s what we’ve had this week.

Tacos (brown ground turkey, add leftover rice, a can of black beans and cooked til warm. Then add 1/2 cup salsa, 1 tsp cumin, 1 tsp chili powder) Eat with shells.

BBQ pork sandwiches Cook pork tenderloin in crockpot til it falls apart. Add 1 cup bbq sauce and shred. Put on buns, eat with baked beans and salad.

BLT’s Cook turkey bacon in oven for 2o minutes, cut up tomato, add lettuce and toasted whole grain bread. Eat and enjoy!

Pizza Pasta Bake Cook egg noodles, put in baking dish. Add pizza sauce, pepperoni, and mozzerella cheese. Bake for 20 minutes til the cheese is bubbly.

Pork Tenderloin steaks fried in a pan with 2 tbs olive oil. Eat with german potato salad and green beans.

What have you been eating this week? We are trying to cut back on meat and a lot of times we have no meat for breakfast and lunch. But it’s hard to get away from it at dinner! What’s on your menu?

This week I’ve been wandering the internet lost and alone (yes, a lot like the Incredible Hulk) looking at recipes. Here are the ones I plan to make for my crazy family (not the Avengers family…just the regular ones).

Monday: Grilling burgers at a friends house (no recipes needed)

Tuesday: Spinach Strawberry Chicken Salad OMG this recipe looks so yummy!


Wednesday: White Wine Mediterrean Chicken

Thursday: Ghoulash with Ground Turkey

Friday: Tuscan Bean Soup

Menu Monday on Tuesday

I moved to wordpress! Yay! Here’s my Menu Monday on Tuesday.

Last night was my son’s play. He was Johannes Brahms and it was so cute. So on Monday all we did was have clean out the fridge night for dinner. It’s nice to do this so you can get rid of/eat your leftovers.

Tuesday- Spaghetti with ground turkey and parmigiana reggiano, green beans

Wednesday- Big salad from our garden. Kale, butter lettuce, carrots, green onions, hard boiled eggs and some turkey

Thursday- Cajun Bean soup

Friday- Homemade pizza night

Monday Whole Wheat Pasta with a light cream sauce, peppers, onions and kale

Tuesday Baked chicken (spray pan with olive oil, sprinkle, garlic and lemon on chicken) Bake at 375* for 40 minutes and Mediterranean kale

Wednesday Chili (kids will make it chili frito pie) I love to make this in a cast iron skillet it gives it amazing flavor.

Thursday Sandwiches (concert night for my boy!)

Friday Date night (finally we’ve not had one in months!) Might get the kids a cheese pizza, if I’m really industrious I might make it.

It’s menu day!

I’ve been surfing the web for new recipes to eat. Here’s what I’ve decided upon for this coming week.

What do you guys do for the weekends when you have to cook so many meals? We usually do tuna fish sandwiches, grilled cheese, soup, breakfast for dinner, etc. Any new menu ideas for me? Please…I’m begging here. I need some new dinner ideas. Share!

Menus for the Week

Here’s the menu I have decided to cook for the week. I do menu plan because it requires me to go through my pantry and see what I have and what needs to be used. I believe it is a big time saver as well as a money saver.

There are lots of staples that I do keep on hand so that it’s always available for a meal. Things like crushed tomatoes, black beans, fresh garlic, cheeses, ground turkey, chicken, whole wheat noodles and eggs. Then the baking supplies like flour, baking soda, sugar, brown sugar and vanilla. For produce I usually have salad, cabbage, fruits, squash, asparagus, avocados, broccoli, green beans and corn. These are the things I always try to have on hand.

If you’ve never planned a menu for the week try it. It will save you so much time and money from not going out to eat and using up items instead of throwing them away. The only day I expect to have left overs are Wednesday and Friday. So I planned another chicken meal on Thursday to use up the rotisserie chicken in another way. Friday’s pizza will end up being breakfast of lunch for the kids over the weekend.
