Strawberry Cake with Sour Cream Icing
I made this cake after seeing it on another blogger’s site. It looked so good I had to try it. Here’s how I made it.
Strawberry cake with gelatin
I was out of cake mix. So, I went to allrecipes and got a yellow cake recipe. Made it as directed. In another bowl I split the cake mix into two batches. To one batch I added 1 box of strawberry gelatin mix. I then greased and floured my pans. Had to call my son in for the next part. He helped me by pouring the yellow cake mix at the same time I put in the strawberry flavored cake mix. So half on one side and half on the other. We did this to both pans. Then I took my knife and swirled the two cakes together to make it like a marbled cake. Put it in the oven according to the cake recipe directions and baked it. Let the cake cool for 10 minutes then popped it out of the pan and allowed it to finish cooling the rest of the way.
Sour Cream Cool Whip Icing
While it was completely cooling I made the icing. This has to be one of the best icing recipes I’ve used. It was equal parts of sour cream and powdered sugar (2/3 cup each, whisked together). Add one 8 oz tub of cool whip and whisk it together too. Ice cake. Add strawberries. Yummo! I can’t believe how good this was. Thank you Sidetrackedmom.net and Kraft for this awesome recipe. After I made this and ate it, I asked myself the question. Why does anyone buy a store bought cake? Homemade ones taste so much better! …says the mom who just purchased her daughter’s birthday cake this past week and was reminded again why homemade is just so yummy)!
My girl helped. Here she is whipping the icing. Using the leftover icing she made her own creation. Iced saltine crackers. LOL She loved them and knows that when she grows up she will make a million! 🙂
