Irish Soda Bread great St. Patrick’s Day addition to a meal!

I made a great Irish Soda bread last week.

The kids loved re-toasting the Irish Soda Bread in the toaster oven with a little bit of butter. It was good. Here’s the ingredients.

3 cups flour (I used all purpose)

1 tbs baking powder

1/3 cup of white sugar

1 tsp salt

1 tsp baking soda

1 egg lightly beaten

2 cups buttermilk ( I make my own buttermilk by adding 3 tbs of vinegar to the milk and it sours within 5 minutes). You know it’s ready when it’s clumpy and this was!

1/4 cup butter, melted I melt my butter in a mason jar cause I’m just that cool. Don’t laugh at me for my delusions. 🙂

I combined the flour, baking powder, sugar, salt and even the baking soda in a mixing bowl and lightly mixed it all together. Then I blended the egg and buttermilk together and added that to the flour mixture. Stirred just until moistened. Then mix in the butter. Pour into a sprayed pan. Preheat oven to 325*. Every recipe I looked at said to cook it in a 8×8 pan. But I like the looks of bread. So I made it in a 9×5 pan sprayed with cooking spray.  Baked it for 65 minutes and cooked it until a toothpick I inserted came out clean. Easy peasy. Then after it cooled I wrapped it in aluminum foil and let it set for another 4 hours to let the tastes meld. It was a very simple bread to make.
