Individual Pineapple Upside Down Cakes

Love Pineapple Upside Down Cake? This is for you!

With this recipe everyone can grab their own little cake! This is a cute idea for Easter if you’re taking a dish to a brunch or dinner, and its sure to please a crowd! Its DEEEEELISH!

First here’s what you’ll need:


Cooking Spray

1/4 Cup of Butter (Half a Stick)

1/3 Cup Brown Sugar

2 20 oz cans of Chunk Pineapple (Drained and Reserve the Juice)

Yellow Cake Mix


Vegetable Oil

Whipped Topping


Got your ingredients? Lets mix and bake!

Get your muffin tin sprayed with non stick spray

Next melt your butter in the microwave then add your brown sugar and stir until completely mixed

Next spoon about a teaspoon into each muffin spot

Next drain your pineapple chinks and reserve the juice. We are going to use that in the cake mix

Place 5 chunks in each spot in a star shape

Next mix your cake mix…use pineapple juice in place of water…mine called for 1 cup of water so I used 1 cup of pineapple juice, 1/3 cup of vegetable oil, and 3 eggs…

Mix Cake Batter

Having a helper to watch the mixer is a great idea!

Pour about 1/4 cup of batter into each spot over the pinepple chunks

Pour Over Chunks

Bake at 350 about 20 minutes or so. Make sure toothpick comes out clean.

Out Of The Oven

Take a knife and make sure the sides are loose and cool for about 7 minutes, then flip them over onto a cookie sheet and let cool about 10 more minutes before lifting the muffin tin up

I transfer them onto cupcake liners for easy serving!

Place On Cupcake Holders

Let them cool completely!

Now we top them!!!

You can use Reddi Whip in the can or you can use a cake piper to put on the topping…then a cherry on top!!

A Cake By Any Other Name…

You may have heard it called many things…Better Than (we are gonna keep  it G rated here), Candy Bar Cake, Heath Bar Cake…with a few variations here and there…but here we call it Make Ya Holla Cake! Its simple, but SUPER delicious! I’ll share my version with you!!! It’s a favorite around here!!!

Next let’s get our ingredients together:

Ingredients 2

German Chocolate Cake Mix



1 Can Sweetened Condensed Milk

1 Jar Caramel Ice Cream Topping

1 Tub Whipped Topping

2 Heath Candy Bars

Let’s Get It Started:

First mix and bake the cake as directed in a 13 x 9 Pan

Mix and In the Pan

Let cool completely and get your toppings ready

Out Of The OvenReady to Dress

Poke Holes All Around

Poke Holes

Pour Sweetened Condensed Milk Over Cake and refrigerate about an hour

Sweetened Condensed Milk

Remove from refrigerator and Pour Caramel Topping Over Top and refrigerate about another hour

OH Now The Caramel

Take out and top with tub of whipped topping

Whipped Topping

Crush candy bars and sprinkle over the top

Fall into Chattanooga

When I think of Fall right now I think of driving through Tennessee when my first born was 3. We had family passes to the Chattanooga aquarium and the family Discovery Museum there. We only went 4 or 5 times that year. But it was such a fun family memory. We would just pack up and leave our Nashville area home and make a day of it.

The fall colors were turning all the leaves such vibrant colors. The hills and valleys of our beautiful state looked almost staged with beauty. Our windows were down on the car and the radio was up. We were singing some lovely 90’s tunes and feeling so very alive. We’ve now got 3 children and no funds to have museum or aquarium passes. But we would love to go again sometime. It’s so special the things you can do with your kids and the time you spend with them. The years truly do fly by before you know it. My first born is now in drivers ed. Sigh. He will be in college in 3 years. How did that happen?

Take notice of your life every day. Live in the moment and love your children. Listen to them and really hear what they say. They will only be young once. These are days you’ll never get back. Thank you Sits Girls for taking me back in time and reminding me of a more youthful carefree time! Fall into Tennessee and have a great adventure. If you’ve never been Fall is an excellent time to go!


Do college students sometimes need inspiration?

Absolutely. When I was working on my masters degree it was sometimes really hard to focus. With three kids and being in college my focus was probably not on that paper. Teachers expect things from you, your kids expect things from you, your friends and family expect things from you as well. It’s hard to be a college student and a parent. When you are on a strict schedule with many balls in the air it is sometimes helpful to click here and get some extra inspiration or help.

How you study is as important to your college career as when you study. Make sure your environment for study is a quiet place with very little distractions. If you have to, get out of your home and go to the library.  That is better than doing it at home where you are sure to get interrupted with many requests for juice and snacks. When writing a technical paper, which I had to do many times when I was going for my masters, that one moment when they ask for juice your entire technical well planned thought is then gone. Up in smoke. Poof. That makes it really hard to get that paper written.

Organize your thoughts in an outline so you know where your paper is going. If you can get a well thought out timeline of events then that gives you a plan. Your plan is your paper almost written.  Now just go on and fill in the blanks. Your paper is almost done. Congratulations on working so hard at going to college and achieving your goals!

Fall into Flowers

I love Fall! Fall flowers to me are just as beautiful and vibrant as the spring and summer flowers. I planted new fall mums last week. Here’s some of my pics of my fall flowers!

I love the rust colored flowers. After I bought these I saw mums that were pink on the edges and yellow in the center. I had a bit of mum envy then!


I love the bright yellow color! They really show off my small flower bed. And finally my knock out roses which have gone crazy this year and are about 4 feet tall!
